Spider Potatoes

Description
Another family favorite usually made by my Nonno at various gatherings. Consists of creating a potato pancake-like batter with lots of garlic and grated cheese, fried in olive oil and cooled for maximum flavor.
Ingredients

4 baking potatoes
2 eggs
1 1/2 cups pecorino romano
garlic powder
onion powder
parsley
black pepper / red pepper
4 tbsp flour

Directions
Wash potatoes good but leave the skin on. Using the biggest holes on a cheese grater, grate the potatoes into a large bowl. Add eggs, grated cheese, and spices into the bowl and mix well. Mix spoonfuls of flour (maybe up to 4) until consistency is a bit tougher than pancake batter. In pan with olive oil on medium / medium high heat, drop spoonfuls of batter into frying pan. Flatten each spoonful with the spoon as it drops into the pan. When cooked and a bit golden brown, put directly into a dish (and not onto paper towels). Eating when cool is best – flavors meld together.
