Pork Chili Verde

Difficulty: Easy

2 lbs pork (boneless ribs… you want to have some fat on the meat)
1 onion
4 green chili peppers
1 can black beans
1 can great northern beans
3-5 tomatillos (quartered cherry tomatoes okay alternative)
1 large jar medium salsa verde
salt & pepper

1. chunk up the pork, season it with salt pepper and cumin, and quickly cook outsides on high heat in pan
2. dice tomatillos, onion, and chili peppers and cook in olive oil until brown
3. dump beans, vegetables, pork, and all other ingredients in crock pot
4. cook on high for 30 min, then on low for at least 3-4 hours
5. do laundry during cooking
