Dolci Alla Mandorla

Description
A candy favorite from my Nonno. First made by me for Saint Calzones Day 2009.
Ingredients
4-6 cups of sugar
1 1/2 lbs roasted almonds
1-2 tbsp honey
zest from 1 orange
1 tsp vanilla

Directions
Roast almonds on 375 degrees in oven for 5-8 min.

Heat the sugar in the pan (med-med-high heat). Mix constantly with a wooden spoon until caramel-like and light-brown in color. Add all other ingredients, including the roasted almonds and a little juice from the orange after you’ve added its zest. Mix well until dark brown in color and turn off heat. Dump onto wax paper on a baking sheet and press down with spoon to flatten. Let cool completely. Place additional wax paper over top, then break with hammer.
