Ingredients
1/2 cup vegetable oil
1 cup sugar
2 large eggs
3 bananas, mashed
2 cups flour
1 cup nuts
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
3 Tbsp. milk
1/2 tsp. vanilla (real, not imitation)
Few drops almond extract (optional)
Directions
Put all ingredients except nuts in a large bowl and beat well. Fold in
nuts, pour into greased and floured loaf pan (9x5x3). Bake in preheated
oven at 350 for 55-65 minutes. Do not overbake. Toothpick inserted in
middle of loaf will come out clean when bread is done. Cool and store
overnight before cutting (yeah, sure!). Makes one loaf.
Best served spread with butter and microwaved for 15 seconds or with just spread with cream cheese. If you’re daring, try to dip quickly in milk.
